This delicious roasted carrot pasta dish is made with roasted carrots and a creamy sauce. It’s easy to make and perfect for a weeknight dinner.


  • 1 pound pasta
  • 2 cups carrots, peeled and sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley, for garnish


Delicious Roasted Carrot Pasta
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the carrots with olive oil, salt, and pepper. Spread the carrots out on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
  3. While the carrots are roasting, cook the pasta according to the package instructions.
  4. In a large saucepan, heat the heavy cream over medium heat until it starts to steam. Add the Parmesan cheese and stir until the cheese is melted and the sauce is smooth.
  5. When the pasta is done, drain it and add it to the saucepan with the cream sauce. Toss the pasta with the sauce until it is evenly coated.
  6. Add the roasted carrots to the pasta and toss again.
  7. Serve the pasta hot, garnished with chopped parsley. Enjoy!
