This delicious roasted carrot pasta dish is made with roasted carrots and a creamy sauce. It’s easy to make and perfect for a weeknight dinner.
Ingredients:
- 1 pound pasta
- 2 cups carrots, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Chopped parsley, for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the carrots with olive oil, salt, and pepper. Spread the carrots out on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
- While the carrots are roasting, cook the pasta according to the package instructions.
- In a large saucepan, heat the heavy cream over medium heat until it starts to steam. Add the Parmesan cheese and stir until the cheese is melted and the sauce is smooth.
- When the pasta is done, drain it and add it to the saucepan with the cream sauce. Toss the pasta with the sauce until it is evenly coated.
- Add the roasted carrots to the pasta and toss again.
