This easy Thai Bubble Tea is a homemade version of the popular boba drink that’s so full of flavour and tasty! It’s a mix of Thai tea and brown sugar bubble tea that only takes a handful of ingredients to make.

Thai bubble tea.

There is no such thing as too much boba in one’s life. I could literally drink bubble tea all day everyday and recently I decided to make this Thai version at home. Since moving, the boba shops around me haven’t really made an impact. We tried one recently where I ordered a Brown Sugar Thai Tea and it was the first time I’ve never finished a bubble tea. So here I am, making my own once my thai tea came in the mail and I’m here to share with you how you can my your own too!

Ingredients You’ll Need

Thai tea.
  • tapioca pearls — I use these specific ones for extra sweetness for this hojicha boba. You can use any topioca pearls you like.
  • muscovado sugar — or dark brown sugar. Muscovado sugar is a little less refined than regular brown sugar so it has more pronounced caramel and toffee notes to it.
  • Thai tea
  • half and half — or non dairy alternative, sweetened condensed milk, coconut milk.
  • water
Boba pearls.

How to Make Brown Sugar Thai Boba

Brown Sugar Boba Pearl Syrup

  • Prepare your tapioca pearls according to the package.
  • In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
  • Remove from heat once it has thickened.

Thai Bubble Tea

  • Bring water to boil and add the Thai tea mix.
  • Allow the Thai tea to steep for at least 30 minutes and cool to room temperature. Or chill in the fridge until ready for use.
  • In a cup, add in half of the brown sugar syrup with the pearls.
  • Top with half of the tea and half of the dairy.
  • Stir to combine and enjoy!
