Tuscan White Bean Soup is a hearty and flavorful soup that is perfect for a cold day. This recipe is easy to make and can be customized to your liking by adding different vegetables or protein sources.

To make Tuscan White Bean Soup, you will need the following ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 4 cups vegetable broth
  • 2 cans (14.5 oz each) of diced tomatoes
  • 2 cans (15 oz each) of white beans, drained and rinsed
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup uncooked small pasta (optional)
  • 2 cups chopped kale or spinach (optional)

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is translucent about 5 minutes.

Add the carrots and celery to the pot and cook for an additional 5 minutes, until the vegetables are tender.

Pour in the vegetable broth, diced tomatoes, and white beans, and stir to combine. Add the basil, oregano, thyme, salt, and pepper, and bring the soup to a boil.

If you want to add pasta to your soup, stir in the uncooked pasta at this point. Reduce the heat to a simmer and cook for an additional 15 minutes, or until the pasta is tender.

If you want to add kale or spinach to your soup, stir it in during the last 5 minutes of cooking.

Serve the Tuscan White Bean Soup hot, garnished with additional herbs or grated Parmesan cheese if desired. This soup is delicious on its own, or you can serve it with a side of bread or a salad for a complete meal.
